Wild Rice Salad

2 C Cooked & Cooled White or Brown Rice

1 C Cooked & Cooled Wild or Black Rice

½ C Olive Oil or Safflower Oil

½ C Rice Wine or Apple Cider Vinegar

½ C Small Dice Celery

½ C Sliced Green Onion

½ C Fresh or Frozen Corn Kernels

½ C Dried Cranberries or Dried Blueberries

½ C Roasted & Chopped Almonds

To Taste Salt & Pepper

 

MIx all ingredients together except nuts then cover & chill in the refrigerator until service. Top with toasted nuts & enjoy.
